Canning Fresh Vegetables

Really. What is not to love? Curly and I canned this afternoon!

He made my Granny’s Sour Pickle recipe with his first batch of cucumbers. We’re still waiting on the dill to grow large enough to begin cutting it, so he made the sour pickles. They are yummy!

I made a tangy batch of pickled yellow and zucchini squash. They also have onions and peppers in there! I’m just so thankful all of the seals worked! Now we just wait and then we’ll enjoy!

Two of our sons have been finding blackberries around the property. We knew they were here, but they are producing fruit, and we are hopeful to make some blackberry jam later in the season!

I’m beginning to wonder if anyone is out there? 😀 What do you like to make in your kitchen? Please do share in the comments!

    I’m knee deep in strawberries right now. It’s very exciting! How big is your garden? You have so much land! Here in MA my half acre is large for the area, but you have so much more space! I’m a little green. =)

      Our garden is quite large. I wrote the sizes on another post, but basically we have four large plots with the largest one full of corn planted at two different times. The other three are stepped and each one is larger than the one below it. We have 15 acres of land, which we feel incredibly blessed to have! We used to live on one acre, and yes, I would guess a half-acre is a lot in MA. It is all about perspective though! I am green when I think of all the rich culture you have for a day trip or an overnight! So many places in the NE I’d love to see and haven’t yet!

        You are right about that. We have ample access to so many museums and other cultural activities that it isn’t even possible to partake in them all, even as homeschoolers! I will have to find your other post on your garden. It’s my favorite part of summer.

      Aw thanks! I’ll have to report back when we open them in a couple of weeks. Hope they taste as good as they look. It is always trial and error with home canning (and cooking sometimes too!;).

    I am soooo envious of your early growing season. We are knee deep in soggy ground and tons of weeds, but the veggies all look great so far, I mean , the plants…all I can boast of so far are blossoms on the tomato plants…we have a long ways to go before we start canning from our 80 tomato plants:)

      80 plants?! Wow! We have lots of green tomatoes, but no red ones yet except my cherry tomato plant is giving me red ones every day. They are so yummy too! As for the soggy ground, it rains here every day. Such strange weather! I’m not complaining, but it is unusual to have this much rain this late in the season.

    I’m out here and reading but generally catch up on blogs on my phone whenever I get a spare minute so not always able to comment! We don’t have the land to grow our own food or – honestly – the interest, but we do still work in the kitchen quite a bit 🙂 These days we enjoy making our own bread and are trying out some new crock pot freezer meal recipes!
